NTBackup is the backup utility that comes with Windows utility.
Start -> Run -> NTBackup
You can backup your server's system state and any folders/files that you choose.
If you choose full backup, the "archive" bit on each file backed up gets reset. When a file is updated, the archive bit is "set".
This allows each subsequent incremental backup to know which files have been changed, and only those files will be backed up, you end up with everything backed up to a .bak file. You could then store this .bak file somewhere safe.
To restore the files, you can use the same NTBackup utility.
